Akara Crepes and Akara Pancakes(Akara quesadillas)

So recently I was home alone and I decided to do a food experiment. I made mini crepes from Akara batter, which is blended beans either deep fried or panfried.  Akara can be eaten in a lot of ways by both meat lovers and Vegans or vegetarians.  I shall do a simple recipe for the deep fried style soon. Like I was saying, I did an experiment with Akara which I shall share in another post. I shared it first on the facebook group “So you think you can cook.” A few people tried it and for that I say thank you. I was having a conversation with my friend and fellow foodie blogger Shakirat of  9jafoodie.com, and after our conversation she threw me a bright idea “Quesadillas made from Akara batter. Immediately I knew it would work. After a sleepless night of sketching and thinking about what to name this recipe, I decided to go for it “full throttle.” Oh by the way, I never really concluded on any “Ajebutter” name…In my sketches I called the mini Akara pancakes “pankara” the crepes “Crepekara”(Thank you Sister Kemi 🙂 ), and the quesadillas “akaradilla.” Please don’t laugh I got tired of thinking myself into a brain freeze.

So, without further ado, here is my recipe for my version

Ps: when making Akara for a Vegan or a vegetarian, simply leave out the eggs and crayfish. Some salt, chili would do the magic

I have the method of washing beans in a blender/food processor on my instagram page @nigerianlazychef

Recipe type: Breakfast, Lunch, Dinner
Cuisine: Nigerian/West African
Serves: 6
Ingredients
  • 1½ cups of beans
  • Cooking spray or light butter
  • One small onion
  • 1tsp of crayfish(optional)
  • Half a pack of Knorr seasoning(optional)
  • 1 egg(optional, depending on if you are a vegetarian or not)
  • salt to taste
  • 1tbsp of dry grinded pepper
Instructions
  1. Soak beans for about 10 minutes and wash by either pulsing in a blender or rubbing the beans against both palms and draining out the skin.
  2. These days (according 9jafoodie)You do not have to wash the beans. You can just soak and blend it until smooth using red or brown beans. Most nutrients are in the skin anyway
  3. After washing the beans, blend it with all the ingredients (except the cooking spray or butter) until smooth. Pour in a mixing bowl and season with salt. With making crepes, it doesn't matter when the salt is added
  4. Heat up a non stick pan and if you doubt that your pan will not stick; then you may add some cooking spray or light butter and using a tbsp measure, pour the batter into the pan to make the mini pancakes. Flip after about 2 minutes and fry the other side until done and slightly golden brown. For the crepes, use a ¼ cup measure and poured it into the pan. Slightly move the pan around to spread the batter. Flip after two minutes and set on a paper towel to drain any oil. Repeat this process until the batter is used up. For the quesadillas, place whatever your fillings are on to one side of the crepes and fold; then cut with a knife or pizza cutter and serve.
