I had to get back on the #Fitfam train after eating all kinds of junk. I thought about making a quick salad and I already have a few signature salads, but after I had this one for dinner; all the spots were hit, as in all my hunger spots were satisfied. I did not even realize how hungry I was. Anyway, After making my chicken suya pizza, I had one piece of raw chicken left over. And after what seemed like a long day, I had to do a salad bowl with some chicken suya. I had sort of an emotional day and my nerves were not having it, so I just kept piling on the ingredients into the bowl, and by the time I was done, I had a beautiful work of art starring me in the face. I was so pleased with myself. I felt a sense of satisfaction. I was once more reminded of why I love what I do.
Without much ado, here is the recipe
*Ps: For vegans and vegetarians, simply take out the meat and cheese and go for it. The plantains can also be roasted, or grilled to fit your diet. Food is indeed versatile
- One boneless, and skinless chicken thigh(they are much more flavorful)
- 1tsp dry grindred chili
- salt
- 1tsp suya pepper seasoning
- 1tsp yaji powder
- salt to taste
- ½ tsp peanut oil or any oil available to you
- 1 cup sliced lettuce
- ½cup watercress or water leaves(raw spinach works)
- 1tbsp goat cheese (optional)
- handfull sliced onion
- ½ a cup cucumber(halved)
- Raspberry vinaigrette (optional)
- 2 tbsps kelewele or regular fried plantain cubes
- Season chicken with suya pepper seasoning, grinded chili pepper, salt, and peanut oil
- let it marinate for an hour to 24hours
- place chicken on a stove top grill (do not add oil)and cook until done or transfer to oven after both sides have been cooked. Set cooked chicken aside to rest before cutting
- Cut chicken into pieces and toss in some Yaji powder and set aside
- For salad:
- Layer the bowl with lettuce, followed by the cucumber, goat cheese, water cress, onion, fried plantain, top with chicken and serve with raspberry vinaigrette or you may eat it without the salad dressing
