Easy Candied Peanuts

I have a slight allergy to peanuts, but when I can, I do eat them. My favorite way to eat them is to have them candied with sugar or honey or simply to soak it with some Garri 🙂 (Garrium Sulphate) A.K.A cassava flakes.

When I saw this recipe on If’y’s blog, I knew I had to try it. Ify does have a way of keeping me hooked to these sweets. I don’t even know how to shake it off 🙂

This recipe was and remains a winner in my home, even my ajebutters and their friends ate and ate the peanuts until they got tired. My ajebutter1 was so excited. I guess her excitement had to do with the fact that she loves sugar 🙂

We now have a snack recipe for the holidays, picnics and just because :). I can now make my own snack and know what goes into it. No more store bought honey peanuts, no more store bought candied peanuts. I know what to do when I crave candied nuts

If you do not do peanuts like me, you may use almonds, or cashew nuts. If you are going with the peeled nuts, please make sure you do not roast it for too long in the oven.

Ingredients
  • 1 cup of sugar
  • ½ cup of water
  • 2 cups of raw or blanched or raw peanuts, almonds or cashew nuts (peeled or unpeeled works. I used the peeled kind)
Instructions
  1. Pre heat oven to 275-300 degrees
  2. Meanwhile, in a pot, combine the sugar and water and stir for the sugar to dissolve
  3. Pour the peanuts into the sugar and water mix and stir constantly until there is no sugar syrup left and the peanuts have been completely coated. (it will look dry). This process takes about 25.30 minutes
  4. Pour the now sugar coated peanuts into an ungreased baking sheet; making sure to spread it out to prevent clumping. Bake for about 25 minutes; making sure to stir constantly to prevent burning
  5. Remove the baking sheet from the oven and allow for the peanuts to cool before serving.
  6. Store any excess peanuts in a jar with a tight lid
