Quick Goat Meat and Rice Sauté

Every one loves a quick and hassle free meal in the summer. Here I was, planning dinner and I had jollof rice in mind, but after a long day, I decided to do something easy. I love easy and savory, and that was how this recipe was born. The easiness and the process of it made me name it a ‘rice saute’

I like days when I can just come up with some thing quick and easy for my ajebutters and I. It is not everyday that I like to spend elaborate hours in the kitchen making a particular meal. Sometimes, I just want to spend 15-30minutes and call it a day and this recipe was a winner. Yes it was the one that won!

Ingredients
  • 2 cups of rice (washed and drained) or 2 cups bulgur(no need to wash bulgur)
  • ½ lb of half way cooked and chopped goat meat (season and marinate with garlic, salt, ginger and onion)
  • 3-4 plum tomatoes (chopped)
  • 2 habanero peppers or ata-rodo(deseeded to reduce heat; then chopped)
  • half of a medium onion(sliced)
  • 1 crushed garlic
  • ½ an inch of ginger(grated)
  • 1 tsp thyme
  • ½ tsp curry
  • ⅛ spoon of grated nutmeg
  • 1 bay leaf
  • salt to taste
  • ¼ cup of oil
  • Meat stock or water
Instructions
  1. Wash rice until clear and drain
  2. in a medium pot, heat some oil and sauté the onions until almost translucent; then add the chopped goat meat and sauté until the goat meat is well browned, but not burnt. Add the chopped tomatoes, peppers, garlic, ginger, curry, knorr cubes, thyme and the bay leaf. Sauté until the tomatoes have reduced. Add the rice and sauté with the tomato mix; until every grain is coated with the sauce.
  3. Pour in the meat stock enough to cook the rice and bring to a boil. Cover with a foil wrapper and a tight lid, reduce the heat and let the rice cook for about 10-15minutes. check for doneness and seasonings; then add the nutmeg stir. If the rice is still a little hard, cover once more for about 10minutes on low heat and let the heat cook it; then serve
Notes
I used meat from a male goat because they cook faster as they are softer. Female goats have a more tougher meat. You may add some basil or scent leaves to your pot after cooking for more flavor.
