Savory Barbecue Chicken

It is that time of the year and  (barbecue time!) and I had to whip out this recipe. It is savory, it is slightly sweet and it had my ajebutters singing with happiness. Let me give you a little secret. When you can engage the little ones with your cooking, you have won more than half of your kitchen battles. My ajebutters would eat anything, but they are also sometimes picky; hence my love for easy savory recipes. Ajebutter one loves savory food. I noticed that even with her love for baking, she does not fancy too many sweets.

After cooking the chicken, it was time for dinner and we licked our fingers 🙂 It was sweetly messy and just fun. The meat was so succulent; it was so juicy on the inside and outside. There was not a dry piece of chicken to be found in the batch I made. Eureka!

To make this chicken you may use the grill or the oven. I found myself working between two different temperatures (350-375) and the chicken cooked just fine.

To use sesame seeds, you may toast them in in a pan or just use it like that. I preferred not to toast them 🙂

I love when my recipes are successful, it gives me a new reason to sing sing sing!

Savory Barbecue Chicken

Ingredients
For chicken
  • 8 medium drum sticks. washed and pat dry
  • 1-2boullion cubes
  • Sesame seeds for garnishing(optional)
  • 1tbsp oil(coconut oil or olive oil)
  • salt to taste
For sauce
  • 1 bottle of bbq sauce (about 18 oz) (honey or hickory smoked preferable)
  • 1tsp Cameroon pepper
  • ½ tsp. black pepper
  • ½ tsp curry powder
  • ½tsp dry thyme
  • 1 garlic clove(grated)
  • ½ inch ginger (grated)
Instructions
  1. wash and pat chicken dry. Season with salt, bouillon cubes and the oil. Cover and let it sit in the fridge for about 1-12 hours
To make the sauce, pour all the bbq sauce into a large bowl and mix in all the ingredients listed for the sauce and let it rest
  1. Pour the sauce into the chicken; making sure the sauce covers each drumstick
  2. Crank up the oven between 350- 375degrees, line a baking sheet with parchment paper (if you do not have parchment paper, you may just use a non stick oven tray or what ever you have. You may use your grill if you have one)
  3. Grill the chicken in the lined pan for about 25-30 minutes (depending on the temperature used) or until juices run clear. Sprinkle on some sesame seeds and serve.
