Herby Fried Chicken Legs(Lazy Chef Christmas)

It smells like Christmas and if you ever helped fry chicken during the holidays; then you are in for a treat.  Anyway let’s do some holiday food therapy. A while ago, I got this recipe from my friend Maram and saying that I love it is an understatement. The first day she sent some of the chicken to my home for my ajebutters and me to try, my taste buds sang hallelujah at the first bite.

When people say they do not like nor eat chicken, I always think “oh you are nuts!” If you eat chicken, you have got to try this recipe.  Growing up in Nigeria, we ate more beef; and chicken seemed to be a more expensive meat except you had your own poultry farm. Growing up with my siblings, we ate chicken and turkey mostly during the holidays and frying the chicken was a chore, you had to season and steam it; then fry it before using it for any cooking. I have to say, the older I have gotten I kind of realized that no one has the time for boil and fry fry everytime 🙂 During the holidays, every one wants to spend time with their families, no one wants to slave and quench in the kitchen over some fried chicken. Gone are the days when we cooked all day during the holidays. With simple recipes such as this, you won’t need to break your back to please your folks at home or your guests 🙂

I remember when I was twelve years old my father bought a live turkey. I had never seen a live turkey and it was the most colorful bird I had ever seen at that time. The bird was left outside and fed with bird feed to keep it fat and healthy. During Christmas morning, daddy gave instructions on how he wanted the bird prepared and that was how the poor bird ended up in our stew pot. (Oh may GOD your poor turkey soul:( )                                                                      There is a distinctive savory smell that comes with fried chicken or turkey during the holidays and the smell that comes with making this chicken is reminiscent of that scent. Kitchen nostalgia 🙂

One thing I love about this recipe is that the chicken can be grilled, sautéed or even baked as a healthier option.  To get the maximum effect of  seasoning to the frying, you have to make use of the soft/ agric chicken; as the stewing hen has a tougher meat. You could even use the chicken for your stew or soups once it is cooked

Ingredients
  • 2lbs soft or Agric chicken legs or any chicken part you choose(wash and pat dry)
  • 1 bunch parsley(use scent leaves if you want)
  • ⅛ cup vinegar
  • 4 garlic cloves
  • 1 inch ginger
  • 4 habanero peppers (ata-rodo)
  • 1-2tbsps oil
  • bouillon
  • salt to taste
  • oil for frying

Instructions
  1. combine everything except the chicken and smoothly blend into a paste.
  2. Pour it over the chicken and cover to marinate for 1-12 hours. After marinating the chicken, heat your oil for frying or fire up your grill to 350 degrees and cook; making sure to flip several times until the meat is cooked and the juices run clear. Eat with any side
