The Nigerian Salad

by Nma Okpara // August 3, 2018 // 4 Comments
If there is one food I revere, it is the Nigerian salad. It is one dish that can serve as a full meal or a side dish. It can also be made in a whole lot of  different ways with... Continue reading →

Edikang Ikong(The King of Efik Soups)

by Nma Okpara // October 6, 2016 // No Comments
Edikang Ikong…the king of Efik soups… In my honest opinion, Edikang Ikong is a man and Afang a woman. The robustness and bold flavors of this soup makes it everything it is. Every single morsel of this soup feels like... Continue reading →

One Pot Efik Style Coconut Rice (Edesi Isip)

by Nma Okpara // September 22, 2016 // 2 Comments
If there was ever any Efik dish I enjoy cooking, it’s this simple coconut rice. On days I want something quick and easy and one pot, this recipe comes in very handy. One pot dishes for me are quite exciting as it makes use... Continue reading →

Efere Afang(Queen of The Efik Soups) Afang Soup

by Nma Okpara // March 8, 2016 // 2 Comments
I conquered Afang and I had to pat myself on the back. If there is any soup I was ever afraid of cooking, it’s Afang; because any little mistake ruins an entire pot. I remember Nse sending me the picture of a pot she made... Continue reading →

Efere Etighi(White Okra Soup) With a Twist

by Nma Okpara // March 6, 2016 // No Comments
If you have ever had warm okra soup with cold eba on a week day before school, you will enjoy not only the recipe, but the sweet nostalgia of this recipe. It’s no news that my son has some food... Continue reading →

Afia Efere (White Soup-Efik Style)

by Nma Okpara // August 12, 2015 // 16 Comments
I cannot stress it enough that Nsala i.e. the Igbo white soup is different from that of the Efik’s. They are both white, but they are not one or the same. Afia Efere which is the Efik version makes use of less... Continue reading →

by Nma Okpara // June 17, 2015 // 10 Comments
I have a made local jollof rice a few times and I do have one  here. It is quite funny because this method for Iwuk Edesi was one of the ways I made my “Local jollof rice” and it is in fact the Efik... Continue reading →

by Nma Okpara // June 8, 2015 // 19 Comments
I am about to blow your mind with the easiest and most tasty pottage you would ever eat ala Asandia Hogan. I met Asandia Hogan on Facebook. She is all things Efik and is a walking Efik Encyclopedia. She... Continue reading →

Fisherman Soup

by Nma Okpara // March 17, 2015 // 16 Comments
So I am still welcoming the Spring and this recipe is so inspiring for the rainy Spring evenings. I  remember visiting an aunt and every time I was at her place, she was always cooking fish and oil with peppers. I never understood for the... Continue reading →

Nigerian lazy chef(live, life, love)

Hi... my name is Nma. I am quirky, and what you would call a nerd. As a growing girl, I disliked ‘going into the kitchen’ because I was so ‘lazy’. In fact, my laziness when it came to cooking could be said to have superseded epic proportions! At a point all I could cook was ‘jollof supergetti’ for my brothers. While my father was alive (may GOD rest his soul), he used to have me make him fresh, oil-less okra soup and boy did I hate it! As the years went by, I started falling in love with art. And the necessity to cook for others, and myself, pushed me to look for ways to rustle up simple but delicious meals. From then, I became more interested in cooking and started developing recipes. I now see cooking as an art, and I consider it my own contribution to the arts in general. Cooking has inspired my project - “Dine Africa”, which is set to show Africa’s culinary culture and exotic cuisines alongside its wide variety of ethnic nationalities, cultures and enormous land mass. Please join me as I celebrate the arts through African (Nigerian) cooking; and through my mother’s recipes (some of which I tweaked to fit my choices). I shall also share some easy kitchen tips for the ‘lazy’ cooks like me. Join me as we celebrate food, love and life. Dine Africa with me. Blessings.
