Plantain Pie

Ingredients
  • 2 over ripe plantains
  • 2 medium to large eggs at room temperature
  • 1stick or ½ a cup of melted butter
  • 11/2 cup of oat flour. Any flour works
  • ⅓ - ½ cup of brown sugar. You may use less or more. You may also substitute with any type of sugar
  • 1tbsp oat meal
  • ¼ tsp of salt
  • 1tbsp of baking powder
  • 1tsp of baking soda
  • 2tsps of vanilla extract
  • ¼ tsp of nutmeg (optional)
  • 1-2tbsps desiccated coconut
  • 4 tbsps. of any type of chopped nuts. I used walnuts and almonds
  • 2tbsps of black currant or raisins
Instructions
  1. pre heat oven to 350 degrees
  2. In a large mixing bowl, mah mash plantain until really mushy
  3. pour in all the ingredients and thoroughly combine
  4. rub butter onto a pie dish or loaf pan and dust with a little flour. Pour in the batter and bake for about 45 minutes between 250-350 degrees
Notes
You may reduce the heat of your oven depending on how hot your oven gets. I had reduce mine to 250 after the first 10minutes
You may use a pie or loaf pan
To make oat flour, just measure out some regular oat meal and run it through a dry mill
