Oven Roasted Turkey In A Fresh Tomato and Onion Salad

Ingredients
For turkey:1lb turkey wings or thighs
  • 2 large garlic cloves(grated)
  • 1inch of ginger(grated)
  • 1tsp dry grounded pepper or chili flakes
  • Bouillon
  • 2tbsps olive, coconut or vegetable oil(butter works just fine)
  • salt to taste
For Salad
  • 2 large plum tomatoes(chopped)
  • 2-3 of any chili peppers of your choice(I used cayenne chilies). Ata rodo i.e. Habaneros are great too
  • Half of a medium onion(chopped)
  • 2 small green onion(chopped)
  • ½tsp dry red pepper or dry chili flakes
  • pinch of salt
  • juice of half a lime
Instructions
For the salad. chop all the ingredients. season with the salt and chili flakes. Pour in the lime juice and refrigerate until the turkey is cooked
For the turkey
  1. wash and pat turkey dry. Season with the garlic, ginger, bouillon, oil and salt. let it marinate for about 20minutes. Fire up your grill and grill until cooked. Or roast in a casserole dish in a 350 degree pre heated oven for about 45 minutes or until cooked through. It will be golden brown and slightly falling off the bones.
  2. Toss the turkey and the salad together and serve as a starter or a side dish
