Wash your plantains and pat dry. Peel the skin and slice it using a mandolin or a potato peeler
Heat oil to 350 degrees and fry the plantain in batches making sure to stir continuously to prevent burning. Fry until golden brown but not burnt. Pour unto a paper towel to drain. Season with salt and pepper(toss) while still hot and set aside
