Red Curry...My Funny Valentine...

  • 1½ lb shrimp(cleaned and deveined)
  • 1 hand full smoked fish flakes(mackerel)
  • 3 cups small to medium chopped vegetable mix(onion, red bell pepper, green bell pepper and yellow bellpepper)
  • 3 plum tomatoes
  • 1 large red habanero(minced)
  • 3 garlic cloves(minced)
  • ½ inch fresh ginger(grated)
  • 1 tsp blackpepper
  • ½ tsp white pepper
  • ¼ tsp thyme
  • 3tsps curry powder
  • 2 tsps smoked paprika
  • 2½ tbsps coconut oil
  • 2-3tsps sesame seed oil(optional)
  • 400ml coconut milk
  • 1 tsp corn starch(mix with a little water)(optional)

  1. season the shrimp with salt, ½ tsp black pepper and the sesame oil. Set aside. heat coconut oil. Add the vegetable and onion mix. stir in garlic, and ginger and saut√© until fragrant. Add the white pepper, black pepper, curry, thyme and paprika. Saut√© for one minute; then add the tomatoes and habanero. Stir and cover the pot to cook for a few minutes(this helps to reduce the tomatoes). After4-6 minutes, add the shrimp, fish and coconut milk and season. Cover and cook for another 6 minutes. Add thr corn starch mix if using and cook for about one minute. Add a healthy pinch of sliced scent leaves. Turn off heat and set aside.
