Easy whole wheat “Hot Cakes”

So my ajebutters and I love pancakes. Yes I described them as “Hot cakes” too but there is an explanation.. According to google, pancakes can also be called “flap jack” and “hot cakes” it all depends on what part of the world you are located. Now to my short story…

So, after world pancake day I kept thinking of an easy way to make pancakes and get in my daily dose of healthy because my babies love pancakes and so do I, but I always got weary of making it due to the use of white flour. You see, I am trying to stay healthy with lower calories and more fruits and vegetables. So, while thinking, I was having a conversation with Shakirat about peppers and everything inbetween and she said “bring me some pancakes when you are done.” and I replied “No pancake for you. I will give all to baby.” I love Ara (her baby), she is always smiling. Anyway, I told Shakirat that all the pancakes would be going to Ara while I give her some eba and palmoil lol!!! And yes I will watch Ara eat it all 😛

So Ara baby here are your pancakes…My ajebutters loved it, so I am sure you will 🙂

Easy whole wheat hot cakes

Ingredients
  • 1 cup of whole wheat flour
  • 1 cup of regular all purpose flour
  • 1tsp of baking soda
  • 1tsp of baking powder
  • a pinch of salt to taste
  • ⅛ tsp of chili pepper flakes
  • ½ cup of chopped raisins
  • ¼ cup of chopped dried cranberries
  • ¼ cup of chopped macadamia nuts(optional. I have an allergy to peanuts so for some reason macadamia worked)
  • ½ a cup to 1 cup of sugar(you may use white or brown sugar to your taste and add more to achieve desired sweetness...honey works too)
  • 2 eggs
  • 1 tbsp. of olive oil(butter works)
  • ⅛ tsp of nut meg(optional
  • 1¾-2 cups of low fat milk or butter milk
to make butter milk
  • mix 1 cup of low fat milk with 1tsp of distilled vinegar or lemon juice(ratio 1:1)
  • any syrup and butter to serve
Instructions
  1. Sift flour and mix all the dry ingredients.
  2. make a well and mix in the wet ingredients except the eggs
  3. break and separate the egg white from the yolk and gently stir the yolk into the mix
  4. beat the egg whites until it foams then gently fold it into the mix as well
  5. do not over stir the pancake mix.
  6. let it rest for about 3minutes
  7. heat up a nonstick pan on medium heat. You may slightly grease it if you want. Using a ¼ measuring cup pour the pancake mix to form circles. Cook each side for about 2 minutes and serve
