Almond Crusted, Chicken Wings

Who doesn’t love fried chicken? I have always loved fried chicken. In fact, I live in the south where fried chicken is one of their delicacies. Down here, they make a mean tasting fried chicken. In fact moving from Nigeria was really tough for me as I never even left my father’s house for more than one to three months at a time. I visited Lagos for the first time at the age of 16 after my dad passed away. Trust me, if he was alive he would not even let me cross his front door to any body’s house for the Holidays. The most I went for was a 3day teen camp for Christian teenagers. Even when I visited Lagos, my momm was crying for my return even before a month. So, moving to another continent all together was really tough. I started eating “Soul food” which consisted of  fried chicken, collard greens, corn, corn bread, macaroni and cheese…As in, everything hearty and comforting. And that was how my love affair with fried chicken started 🙂

Anyway I had some chicken and almonds which I really needed to use. I thought and thought and I had this picture of coconut chicken on my mind. I also had to figure out how to make some almond flour out of the almonds I had and do something with it. While blitzing the almonds in to flour, I remembered a conversation I had with my friend who was on the Paleo diet. I already knew that some of it’s recipes called for Almond flour, so with chicken wings in mind I went for some almond encrusted chicken full throttle. I have to say I enjoyed this chicken very much. I served it with my special Asian themed Basil fried rice and that was how dinner was born.

Oven fried Almond Chicken Wings

Ingredients
  • 24 pieces of mini chicken wings cleaned and cut into sections
  • salt to taste
  • Half a knorr cube for chicken(optional)
  • 1 tbsp of black pepper(divided)
  • ½ tbsp garlic powder
  • 1tbsp red pepper flakes(divided)
  • 1tsp of paprika
  • Almond flour about ½ a cup(blitz some dry skinless almonds in a dry mill if you do not have any almond flour)
  • one egg
  • low fat milk ½ a cup
  • ½ tbsp olive oil
  • ½ tbsp of olive oil for coating
Instructions
prep
  1. season chicken with salt, 1.2 of the red pepper flakes, ½ tbsp of olive oil, ½ tbsp black pepper, knorr cube (if using) and salt and let it marinate for about an hour or two
  2. preheat your oven to 350 degrees
  3. whisk one egg with ½ a cup of milk and set aside.
  4. in a grocery or zip lock bag pour in your almond flour and season with the garlic powder, the other half of the black pepper, the other half of the red pepper flakes and paprika(you may add a pinch of salt). You don't have to use a grocery bag. you may use a bowl and just rub the chicken on the flour before it goes in the oven

  1. After the chicken is well marinated
  2. dip them into the egg and milk mixture, give each piece a good shake and dump them one after the other into the bag with the seasoned almond flour. Shake the bag vigorously until each chicken wing is lightly coated with the flour
  3. place on an oven tray, brush with the remaining half of the oil or use a cooking spray and lightly spray. Cook the chicken in the oven until it is juicy on the inside and crispy on the outside. Serve with sweet chili sauce or any barbeque sauce
