This bread was born out of sheer laziness 🙂 We love plantains and bananas in my home, but mostly plantains. We are also in the habit of eating ripe plantains. They can be made by frying, boiling and even into fufu i.e. swallow balls.
There are some things I am obsessed with and two things that make the list are plantain and coconut. Lately, I seem to have been making everything with coconut. In fact I had to slow down a whole lot. And in this sweet pie, two of my favorite things came to play.
Anyway, Ajebutte2 graduated at church and I decided to do something extra special for him. Apart from my chicken stew, I really wanted to bake him something sweet. I went roaming in my kitchen and I found two over ripe plantains. As usual, I never bin them; I always find something to do with left overs. I decided to do a plantain bread, but for some reason I grabbed the pie dish instead of the loaf pan; Hence the name “pie”. The name “pie” is the only difference this dish has from the regular loaf. If you want to make some plantain bread, this is also a recipe to follow. I could have used the regular loaf pan, but I had already greased the pie dish, and it would taste the same anyway.
I have to say I am pleased with this recipe. Trust me, I do not bake, so when this pie(bread) turned out great I was beside myself with happiness and I was also the best mommy in the whole wide world. I have two left feet when it comes to baking, but pleasing my child was my priority and I am grateful for that. Thank you to my ajebutter1 who excitedly baked with me and was too happy doing it. The baby has a beautiful palate 🙂
this pie is sweet, nutty, filled with love and satisfying
- 2 over ripe plantains
- 2 medium to large eggs at room temperature
- 1stick or ½ a cup of melted butter
- 11/2 cup of oat flour. Any flour works
- ⅓ - ½ cup of brown sugar. You may use less or more. You may also substitute with any type of sugar
- 1tbsp oat meal
- ¼ tsp of salt
- 1tbsp of baking powder
- 1tsp of baking soda
- 2tsps of vanilla extract
- ¼ tsp of nutmeg (optional)
- 1-2tbsps desiccated coconut
- 4 tbsps. of any type of chopped nuts. I used walnuts and almonds
- 2tbsps of black currant or raisins
- pre heat oven to 350 degrees
- In a large mixing bowl, mah mash plantain until really mushy
- pour in all the ingredients and thoroughly combine
- rub butter onto a pie dish or loaf pan and dust with a little flour. Pour in the batter and bake for about 45 minutes between 250-350 degrees
You may use a pie or loaf pan
To make oat flour, just measure out some regular oat meal and run it through a dry mill

How come a whole tbs of baking powder? Wont it taste too much of the baking powder? I’m not a baker and often I mess up these things and I have had an overwhelming taste of baking powder or soda in my flops. I really want to try this and honestly will be praying till the last minute that it actually turns out amazing and like your picture.

I noticed no sugar. Is this on purpose?
Hi Nwando. there is sugar in the recipe right above the 1tbsp of oatmeal
