Pineapple, Mango, Coconut Drink and Popsicles

The Summer is almost over and I really need to share this recipe before it is actually over. This recipe has a lot of things I love. It has coconut milk, oranges, mangoes and pineapples. Without these fruits, no summer is complete for me. They just seem to taste better especially when chilled 🙂

Anyway, I had bought a lot of fruits from the farmer’s market and the mangoes, pineapples and oranges were getting too ripe and I knew I really had to do something worth while with them. I also had some fresh coconut milk, so the magic that is this drink had to happen. Now, usually I wouldn’t blend my fruits, but this one was worth it and I have to say, I have done it 3 good times and each time, I enjoyed it and so did my ajebutters

As simple as this recipe is, I like it’s versatility. For adults you could add a little something to spike it if you wish. The second time I tried it, I added some rum to it and I have to say, it was quite relaxing 🙂 For the kids, they preferred the popsicles. Either way you choose to go with this drink, you will have no regrets.

One thing I really like about this recipe is the fact that it is sugar free. Although, if you have a sweet tooth you could add some honey but in my opinion, the fruits are sugar enough. So this also means that this recipe is fit fam friendly for the days when you are on a diet, but crave something sweet 🙂

You can serve this drink at any cocktail hour, cookouts, birthday parties, or just for yourself and I promise you it will be a hit each time 🙂 I shared a glass with my friend and neighbor and she came back asking for more 🙂

Pineapple, Mango and Coconut Drink and Popsicles

Ingredients
  • 1 medium ripe to a very ripe mango(peeled and cut into chunks. freezing is optional)
  • half of a ripe pineapple (cut into chunks and frozen overnight)
  • 1 cup of coconut milk
  • juice of half of an orange
  • 1 tsp of honey(optional)
  • ¼cup of rum(optional)
Instructions
  1. Pour all the ingredients into a blender or a food processor and blend. Pour into a glass and serve chilled with some mint leaves.
  2. You may also pour it into a popsicle maker along with some chunks of fruits and freeze overnight

    But I just love your blog. Just beautiful! I am pretty sure Nigerian food should have a category of its own in the sea of African cuisines. It alone is so diverse and needs to be translated even to other African food bloggers like myself. I am yet to try a Nigerian recipe. Ofcourse having roots in Ghana helps with the similarities but I humbly declare that Nigerian food as a standalone cuisine must be respected because it is so so so diverse. Just beautiful!
