Drunken Suya Wings.

by Nma Okpara // July 29, 2018 // 4 Comments
The Summer of 2018 can be said to be the Summer of our lives. I ate so much food and gained 10lbs; even my many trips to the beach couldn’t help my weight gain. And of all the foods we... Continue reading →

Gluten free Suya Pepper Infused Scotch Eggs(The Power Of The Yaji and The Not So Perfect Scotch Eggs)

by Nma Okpara // February 8, 2016 // 3 Comments
I love boiled eggs, but I don’t like boiling them. I always get boiling eggs wrong.  I’m clumsy to the bone, it’s not my thing to peel and boil eggs rara! I made some scotch eggs last Easter, but I never got around... Continue reading →

Lamb Suya (Lazy Chef Twist)

by Nma Okpara // January 22, 2016 // 5 Comments
I’d like to say this is suya with a popping difference. I was going to share this during the past holiday season, but I was too beat down to even function. I was doing too much at once and it just... Continue reading →

Oh how I love akara! Especially as I now know how to make it. I have several recipes and styles on how I have made akara on here. But this recipe is that twist I was really longing for. But... Continue reading →

Salty and Spicy Plantain Chips

by Nma Okpara // November 9, 2015 // 2 Comments
I fried these plantain chips and within seconds they disappeared. Lately, my ajebutters have been having their friends over and they have been enjoying the little snacks I make. Anyway, I had some ripe plantains which I did not want to... Continue reading →

Corned Beef and Herbed Akara. (Fried Bean Fritters)

by Nma Okpara // October 16, 2015 // 7 Comments
If you told me that I would be making Akara(deep fried bean fritters) in this format, I would have laughed in your face and kept it moving.  Akara used to be a nightmare for me. Sometimes, I would fry them and they would end up... Continue reading →

Yam and Shrimp Fritters (Ojojo)

by Nma Okpara // July 20, 2015 // 14 Comments
There are yam balls and there are yam fritters. In my opinion, the yam fritters are a winner. I could eat them all day, I could eat them all night. And yes, my ajebutters ate them with some chopped fresh... Continue reading →

Nigerian lazy chef(live, life, love)

Hi... my name is Nma. I am quirky, and what you would call a nerd. As a growing girl, I disliked ‘going into the kitchen’ because I was so ‘lazy’. In fact, my laziness when it came to cooking could be said to have superseded epic proportions! At a point all I could cook was ‘jollof supergetti’ for my brothers. While my father was alive (may GOD rest his soul), he used to have me make him fresh, oil-less okra soup and boy did I hate it! As the years went by, I started falling in love with art. And the necessity to cook for others, and myself, pushed me to look for ways to rustle up simple but delicious meals. From then, I became more interested in cooking and started developing recipes. I now see cooking as an art, and I consider it my own contribution to the arts in general. Cooking has inspired my project - “Dine Africa”, which is set to show Africa’s culinary culture and exotic cuisines alongside its wide variety of ethnic nationalities, cultures and enormous land mass. Please join me as I celebrate the arts through African (Nigerian) cooking; and through my mother’s recipes (some of which I tweaked to fit my choices). I shall also share some easy kitchen tips for the ‘lazy’ cooks like me. Join me as we celebrate food, love and life. Dine Africa with me. Blessings.
