Local Yam Pottage Stew. When Local Hits The Spot!!!!

by Nma Okpara // September 8, 2016 // 1 Comment
Have you ever had those days when you were hungry and all you had were a few ingredients? Even though, I like the partially old yam, it’s new yam season and with no rice in sight, I made this bowl of... Continue reading →

The Mortar, The Pestle and It’s Place in The Nigerian Kitchen

by Nma Okpara // September 29, 2015 // 10 Comments
While the men returned from the farm, you could hear the sound of the women pounding in the distance “kpom, kpom, kpom!” That was the sound of the pestle against the mortar; milling food items for a family meal. In Africa(Nigeria), there... Continue reading →

And we welcome the cooler season with some fresh fish and yam pepper soup! kai! This recipe reminds me of a dry fish and yam pepper soup, which I hope to share in the future.  I am having sort of... Continue reading →

Ikokore-Ifokore (Ekpang of The Southwest)

by Nma Okpara // August 17, 2015 // 4 Comments
I can boldly say this is the biggest hack since Ekpang. Ekpang to the Efiks, is Ikokore or Ifokore (depending on the dialect) to the Yoruba’s(the Ijebu people to be precise)Ikokore; one of the cuilinary jewels of southwestern Nigeria, is a water yam... Continue reading →

by Nma Okpara // August 12, 2015 // 16 Comments
I cannot stress it enough that Nsala i.e. the Igbo white soup is different from that of the Efik’s. They are both white, but they are not one or the same. Afia Efere which is the Efik version makes use of less... Continue reading →

It was a warm Spring evening, I was lost on what to make for dinner, but I had some potatoes and some chicken. I put the chicken to roast, but I was still starring at the potatoes; not quite... Continue reading →
Nigerian lazy chef(live, life, love)

Nigerian lazy chef(live, life, love)

Hi... my name is Nma. I am quirky, and what you would call a nerd. As a growing girl, I disliked ‘going into the kitchen’ because I was so ‘lazy’. In fact, my laziness when it came to cooking could be said to have superseded epic proportions! At a point all I could cook was ‘jollof supergetti’ for my brothers. While my father was alive (may GOD rest his soul), he used to have me make him fresh, oil-less okra soup and boy did I hate it! As the years went by, I started falling in love with art. And the necessity to cook for others, and myself, pushed me to look for ways to rustle up simple but delicious meals. From then, I became more interested in cooking and started developing recipes. I now see cooking as an art, and I consider it my own contribution to the arts in general. Cooking has inspired my project - “Dine Africa”, which is set to show Africa’s culinary culture and exotic cuisines alongside its wide variety of ethnic nationalities, cultures and enormous land mass. Please join me as I celebrate the arts through African (Nigerian) cooking; and through my mother’s recipes (some of which I tweaked to fit my choices). I shall also share some easy kitchen tips for the ‘lazy’ cooks like me. Join me as we celebrate food, love and life. Dine Africa with me. Blessings.
