⅓ - ½ cup of brown sugar. You may use less or more. You may also substitute with any type of sugar
1tbsp oat meal
¼ tsp of salt
1tbsp of baking powder
1tsp of baking soda
2tsps of vanilla extract
¼ tsp of nutmeg (optional)
1-2tbsps desiccated coconut
4 tbsps. of any type of chopped nuts. I used walnuts and almonds
2tbsps of black currant or raisins
Instructions
pre heat oven to 350 degrees
In a large mixing bowl, mah mash plantain until really mushy
pour in all the ingredients and thoroughly combine
rub butter onto a pie dish or loaf pan and dust with a little flour. Pour in the batter and bake for about 45 minutes between 250-350 degrees
Notes
You may reduce the heat of your oven depending on how hot your oven gets. I had reduce mine to 250 after the first 10minutes You may use a pie or loaf pan To make oat flour, just measure out some regular oat meal and run it through a dry mill
