½ cup good quality atadindin sauce(drain oil)(Any spicy Nigerian stew will work)
1-2tbsps peanut or olive oil
1 cup mixed veggies(chopped green beans, chopped carrots and shredded cabbage)
¼ tsp freshly grated ginger(optional)
1 handful chopped basil(substitute with scent leaves)
Instructions
for the beef
Season the beef with salt, garlic powder and ¼ tsp oil. Let it marinate for about 10minutes.
Heat a wok with ½ tbsp oil. Add the beef and brown. Once brown, remove from the work and set aside. Season the shrimp with black pepper and salt. Add the butter into the same wok used for the beef. Once the butter is melted, add the shrimp and stir fry until pink. Remove and set aside.
to fry the rice
Add 1tbsp of oil to the wok, chop in the onions and add the thyme and cook until the onion translucent. Add the veggies and stir fry for about 3 minutes. Add the ginger and the atadindin sauce(if the sauce is too thick, loosen with 1tbsp water or stock). Stir fry for about 1-2 minutes; then add the rice, shrimp and beef. Stir fry for about 3-5 minutes. Check for seasonings add the basil or scent leaves and enjoy...
