Garlic And Shrimp Pasta. Whip Out The Spaghetti!

Imagine going through the day and not being sure about what to make for dinner. Well that was me and I knew no one at home would find it funny if mommy did not cook. Any way, after rummaging through my fridge and pantry I decided to make some garlic shrimp and pasta. We love garlic anyway, so hey why not?

This recipe contains quite a lot of garlic, it is garlic and shrimp pasta, so garlic plays a major role in this recipe

Once again, during dinner time I had a really quiet house. All I heard was the clanking of forks against our plates. It was a happy clanking. I had a few spoonful left in the pot but by the time I went to refrigerate it, it was gone. Ajebutter1 ate it  down her belly 🙂

This recipe reminds me of when I was a growing girl and cooking “supergetti” for my brothers. It was the easiest thing to cook at that time. I remember not knowing what to do with pancake syrup and I used to pour it into jollof rice and jollof “supergetti.” 🙂 I have to share my recipe for jollof pasta soon. I promise you will love it.

The preparation of this dish is quite easy, really easy to be honest. If you do not like pasta; then try potatoes. And if you do not like potatoes; then a side of toast or spiralized vegetables goes with it too. If you are on team #fitfam; then you may use some whole wheat pasta. Be rest assured that you would be clanking your plates like my ajebutters 🙂

Garlic and Shrimp Pasta. Whip out the Spaghetti!

Ingredients
  • 1lb of spaghetti i.e. about a packet of pasta (any type of pasta works)
  • 1lb of tail on shrimp
  • 2 crushed habanero peppers or ata-rodo
  • ½ cup and 1 tsp of olive oil(vegetable oil will do)(you may use any ratio)
  • 8 cloves of garlic(2 whole ones and the rest crushed into a paste)
  • 1tsp of black pepper
  • 1tsp dry grinded pepper or chili flakes
  • 2tbsps parmesan cheese(optional)
  • a small bunch of scent leaves or basil(cut into any size)
  • salt to taste
Instructions
  1. Bring 4 quarts of slightly salty water to a boil. Add a tsp of oil and pour in pasta. Cook pasta for about 10mintues or until al dente. Drain and run cold water through it to stop the cooking process. Pour the pasta back into the pot and cover to keep warm
  2. in a skillet or wok, heat the ½ a cup of oil and sauté the garlic until almost golden brown, but not burnt. Once the oil begins to foam or bubble, reduce the heat a little and add the shrimp in one single layer and cook both sides until pink. Add the habanero peppers, salt and black pepper; then sauté. Pour the sauce into the pasta along with the basil and grinded red pepper. Toss and season with salt to taste. Garnish with some more basil and cheese(if using) before serving
